Step 3: Adding Red Chili Powder and Dried Chilies
- After the oil has cooled for a while, carefully add the red chili powder to the oil. Be careful, as this can produce a strong spicy vapor, so make sure you're in a well-ventilated area.
- Turn the heat back on to low and cook for 3-5 minutes. This will help the red chili powder release its spiciness into the oil.
- Then, add the chopped dried chilies and chopped garlic to the oil. Cook for 2-3 minutes or until the garlic turns golden brown. Don't let the garlic burn too much, or it will taste bitter.
Step 4: Adding Salt, Sugar, and Paprika (Optional)
- Turn off the heat and add salt, sugar, and paprika powder (if using). Stir well. You can omit the paprika if you don't have it or don't like it.
Step 5: Storage
- Let the chili oil mixture cool for about 30 minutes.
- Pour the chili oil mixture into a container. Make sure there is no water in the container, as it can spoil the chili oil.
- Close the container tightly and store it in a cool, dark place. Chili oil can be stored for several months.
